I was a little skeptical at first when I heard about this Mule variation, but as a lover of absinthe, this has quickly become the favorite!
Ginger Beer / Cocktails

1 oz (30mL) Rootside’s Ginger Beer Mixer
¼ oz (7.5mL) lime juice
1 oz (30mL) Absinthe (Okanagan Spirits Taboo or Arbutus Distillery Baba Yaga)
Sparkling water or club soda
Highball glass or goblet
Fill highball with ice
Add Rootside’s Ginger Beer Mixer, lime juice to taste, and absinthe.
Top off the rest of the mug with sparkling water or club soda.
Gently stir to combine, garnish with a lime wedge and enjoy.
